Zucchini Bread low fat/low sugar

Introduction

Ingredients

    4 egg whites
    1 whole egg
    1 cup packed brown sugar
    1 cup unsweetened apple sauce
    1 T vanilla
    2 cups grated zucchini
    1 cup unbleached white flour
    1.5 cups whole wheat flour
    1/2 t baking powder
    1 t baking soda
    1 t salt
    2 t cinnamon
    1/2 cup wheat germ

Directions

Preheat oven to 350 degrees

Mix together white flour and 1 cup whole wheat flour, baking powder, baking soda, salt and cinnamon in a small bowl

Beat eggs until foamy, add sugar, apple sauce and vanilla in a large mixing bowl; add zucchini and mix.

Add flour mixture until smooth.
Add 1/2 cup whole wheat flour and 1/2 cup wheat germ

Pour into 2 loaf pans coated with vegetable spray and bake 45 min up to 60 min, depending on your oven

Yields 8-10 slices per loaf pan, or an average of 18 servings.
