Mom's Potato Soup

Ingredients

    5 cups diced potatoes
    2 stalks of celery
    1 cup chopped onions
    2 tsp parsley flakes
    1 tsp salt
    Dash pepper
    3 cups boiling water
    1/4 cup flour
    4 cups milk
    2.5 slices of cheese (optional)

Directions

Add potatoes, celery, onions, parsley flakes, and seasonings to boiling water. Cover and cook until potatoes are almost tender. Blend flour with a small amount of the milk. Stir into vegetable mixture. Add remaining milk and cook until thickened. Add cheese if desired.
