Easy & Yummy Salmon Cakes

Introduction

The recipe off of the back of the Chicken of the Sea Pink Salmon package, just modified to be healthier. The recipe off of the back of the Chicken of the Sea Pink Salmon package, just modified to be healthier.
Number of Servings: 8

Ingredients

    * *Onion - Yellow - 1/4 Cup, 1 serving
    *Kraft Mayo Light Mayonnaise (Mayo), 4 tbsp
    * Green Pepper (bell pepper), 0.25 cup
    * Garlic powder, .5 tsp
    * *Pink Salmon, Chicken of the Sea, skinless/boneless, chunk style in water, 4 oz (2 packages)
    * *Egg Beater - Original, 1/4 cup
    * Fiber One Bran Cereal, 1 cup

Directions

In a food processor chop Fiber One cereal to bread crumb consistency. Set aside. Combine first four ingredients in bowl. Add Salmon, egg beaters, and 1/3 cup of breadcrumbs. Form mixture into 8 balls. Roll salmon balls in remaining bread crumbs. Flatten into cakes. Bake on 375 degrees for approximately 15-20 minutes or fry in butter over medium heat for 3-4 minutes.
