Low-Cal Turkey Minestrone

Introduction

This is a delicious soup that my family and friends have enjoyed for many years - serve with Parmesan cheese if desired. This is a delicious soup that my family and friends have enjoyed for many years - serve with Parmesan cheese if desired.
Number of Servings: 8

Ingredients

    1 lb. ground turkey
    1/2 c. onion, chopped
    1 clove garlic, minced
    2 – 14-1/2 oz can stewed tomatoes
    4 c. water
    1 beef bouillon cube
    1/2 c. chopped carrot
    1 tsp. sugar
    1 tsp. basil
    1/4 tsp. nutmeg
    2 c. sliced zucchini
    1/2 c. shell pasta

    Spray bottom of Dutch oven with Pam and brown meat together with onion and garlic. Stir in water, tomatoes after cutting them up (I use a hand-held blender and almost puree them!) and beef bouillon. Bring to a boil and add carrots, sugar, basil, & nutmeg. Bring to boil and let simmer 10 minutes. Add zucchini and uncooked pasta and let simmer another 10-15 minutes. (My family doesn’t care for kidney beans, so I don’t add them – but if you want to – use one can and rinse them well first before adding them to the pot.)

    Serve topped with Parmesan cheese.
