Marinaded and Baked Veggies

Introduction

Easy and Yummy baked veggies-recipe easily double/triples and works well for large gatherings. Easy and Yummy baked veggies-recipe easily double/triples and works well for large gatherings.
Number of Servings: 4

Ingredients

    -1lb of Whole Cremini mushrooms
    (any fresh mushroom would work)
    -1 red and 1 yellow bell pepper
    -1 small purple onion
    -1/2 small eggplant
    -1 large zucchini
    -1 small carton of cherry tomatoes or 1 large tomato cut into large pieces.
    -salt and pepper to taste
    -2 cloves crushed garlic

Directions

Leave Mushrooms and cherry tomoatoes whole. Cut peppers, purple onion, zucchini and eggplant into large chunks.
Marinade: Combine 2oz of balsamic vinegar, honey, and olive oil. Add salt, pepper and garlic to taste.
Combine all ingredients in a ziploc bag and Marinade 2.5hrs minimum to allow flavours to blend.
Spread veggies on a broiler pan or baking sheet and bake in a preheated oven for 20min at 350 degrees.
