1/4 cup Olive Oil
1 cup scallions (chopped)
2 Jalapenos seeded and chopped fine
1 green bell pepper chopped
1 red bell pepper chopped
3 pounds boneless skinless chicken breasts 1 inch cubes
1 cup chicken broth
1/4 cup vinegar
2 tablespoons sugar
1 teaspoon salt
1 tablespoon ground anise seeds
2 tablespoons cornstarch
1 tablespoon shredded ginger (fresh)
2 tablespoon sherry
2 tablespoons light soy sauce
2. cut scallions and peppers
3 grind anise mix chicken broth, soy sauce wine vinegar sugar, salt and pepper.
4 heat oil add scallions and fry several seconds
5. add ginger mixture and chicken to scallions a and hot pepper fry for 2 minutes
6 add chicken broth mixture cook over low heat until chicken pieces are tender. add cornstarch to thicken.
