Basic Spaghetti Sauce

Introduction

This is my basic spaghetti sauce. You can add ground turkey to it, meat balls, use it in lasagna, over spaghetti squash, in pizza fold ups (for the kids lunches), or as pizza sauce. It is quick, easy, and my kids verbally beat me up the last time I bought canned sauce! It was "awful MOOOOM!" Add other fav veggies if you like it chunky: peppers, mushrooms, whole tomatoes, shedded zucchini, shredded spinach, etc This is my basic spaghetti sauce. Ingredients

    1 medium onion, finely chopped
    6 cloves garlic, peeled
    2 Tbsp EVOO

    3 Cans tomato paste (6 oz each)
    3 cups water

    3-4 whole bay leaves
    2 Tbsp rosemary
    Salt to taste (1 tsp for the calculations)
    2 Tbsp "Flax Seed Meal
    1 Cup Parmesan Cheese

Directions

put oil into dutch oven. Finely chop onions (my family doesn't like texture in their sauce! LOL), then grate with a small grater the garlic over the top of the pan. cook both until onions are translucent.

Take off the heat, add tomato paste, water, and mix with a whisk until thourouly blended.

Add remaining ingredients and stir well. Allow to come to a light bubble (about 30 min) on a medium low heat.

*add any additional veggies at the very beginning with the onions, and meat after you add the water, but before the spices, unless you are adding meatballs, add those at the very end.

Could serve 8, for our family of 5 we have SOME leftovers usually (maybe a serving or two!). We make 2 lbs of pasta, because 1 lb is just NOT enough for all this sauce, and 2 lbs is too much- but the kids like buttered noodles as a snack the next day.....

w/o meat we use this as a vegetarian meal over spaghetti squash, in pizza pockets for the kids lunches, etc.
