Pinto Bean and Pork Soup Ala Ken

Introduction

A soup my husband cooked up! A soup my husband cooked up!
Number of Servings: 10

Ingredients

    Pinto Beans - one pound
    Pork Shoulder - one pound
    Onions - one cup chopped
    Celery - one half cup chopped
    Bay leaf - 3 whole
    Garlic - 3 cloves chopped
    Cayenne pepper
    Salt - 1 Tablespoon
    Pepper - 1 Teaspoon
    Water - 4 cups

Directions

Soak beans for 24 hours and then boil for 2 - 3 to help soften.
Pork Shoulder should be sliced fairly thin, trimmed of all fat and seasoned as desired. Bake in the oven for 3 hrs at 250 degrees
Dice Onions, celery and garlic
Add all ingredients to a large pot and heat for one to two hours.
Serving size is approximately one cup.
