Eggland's Best Power Breakfast Cupcake Omelets

Ingredients

    Beans, black, 1.5 cup
    Yellow Sweet Corn, Canned, 1 can (12 oz) yields
    Cilantro, raw, 4 tbsp
    Onions, raw, 3 tbsp chopped
    Olive Oil, 1 tbsp

Directions

This recipe is super easy to make and tastes great! Just drain a can of black beans and a can of corn and put them in a bowl. Then chop up some FRESH cilantro and a little red onion and mix it all together. Add a bit of olive oil if you like (optional). I've had people rave about this and eat it as a salsa with chips, or simply as a side dish. Enjoy!
