Introduction

An Austrian delicacy. This version calls for cream. Experiment with whichever fat content milk you want. I've found that fat-free milk makes the soup too runny. Ingredients

    Butter, salted, 2 tbsp
    Vegetable Broth, 3.50 cup
    Pumpkin - Natrual actual pumpkin, 100 grams
    Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.)
    Ginger Root, 1 tsp
    Jalapeno Peppers, 1 pepper
    Lemon Juice, 1/2 fl oz
    Pepper, red or cayenne, 1 tsp
    Light Cream, 200 grams

Directions

Peel the pumpkin, remove the seeds, and cut into large pieces. Peel the potato and cut it into large pieces. Peel the ginger, chop it up, and then take the seeds from the jalapeno and dice it.

Melt the butter in a large pot. Add the pumpkin, potatoes, the jalapeno and the ginger.Stir until everything is coated in the butter.

Add the broth, some salt and cayenne. Cook for 15 minutes, or until the pumpkin and potato are soft.

Add the lemon juice and cream or milk. Puree with a hand mixer or blender. Give the soup a taste and decide if it needs more salt or some pepper.

EAT! This soup freezes very well.
