No Meat Spaghetti Sauce

Introduction

This sauce is great on pasta or rice for a quick change-up to the usual red meat sauce. This sauce is great on pasta or rice for a quick change-up to the usual red meat sauce.
Number of Servings: 8

Ingredients

    Hurst's Garlic & Herb Lentils,2 cups
    Canned Tomatoes, 4 cups
    Onions, raw, 1 medium (2-1/2" dia)
    *Extra Light Olive Oil, 2 tbsp
    *Baby Portabella Mushrooms, Sliced, 8 oz
    Italian Seasoning, 1 tbls.
    Parmesan Cheese, grated, 3 tbsp

Directions

Cook lentils as directed on package (I make the whole package and save what's left for something later). While lentils are cooking, heat olive oil.
Chop and saute onion.
Chop tomatoes and add.
Chop Mushrooms and add.
After lentils are cooked, use 2 cups, put in blender and blend until smooth and add.
Add Italian Seasoning.
Stir in Parmesan.
Let simmer 30 minutes.
Serve over pasta or rice.
