Spanish Rice adapted from DASH

Number of Servings: 4

Ingredients

    4 scallions, chopped
    1/2 green pepper chopped
    1 1/2 TBSP olive oil
    1 8 oz can tomato (diced no salt added or low sodium)
    6 cherry tomatoes, quartered (optional)
    1 TBSP Cilantro, chopped
    1 tsp black pepper
    3 cups cooked brown rice (cooked in unsalted water)
    11/2 cups chicken breasts, cooked, skin and bone removed,
    and diced

Directions

1. In a large skillet, sauté onions and green peppers and fresh tomatoe in oil for 5 minutes on medium heat.
2. Add canned tomato and juices and spices. Reduce liquid from tomato.
3. Add cooked rice and chicken. Heat through.
RICE:
Cook in rice cooker in advance I used 2 measuring cups of brown basmati to 3 chicken stock. There was left over rice.
