Corn Bread, Savory Mock

Introduction

This is a dense flourless bread. After it is baked I sprinkle shredded low fat cheddar cheese on top, put it back into oven until the cheese melts. This is a dense flourless bread. After it is baked I sprinkle shredded low fat cheddar cheese on top, put it back into oven until the cheese melts.
Number of Servings: 8

Ingredients

    1 19 oz can chick peas
    4 eggs
    1 t salt
    1 t baking powder
    2 T olive oil
    1/3 C sugar substitute
    1 T cumin
    1 t Tabasco.

Directions

Makes 8 muffins 1 serving each or 1 8 x 8 x 2 cake pan sprayed with baking spray.

Combine all ingredients in the blender and process until smooth. Pour in a 8 x 8 baking pan or 8 muffin cups and bake at 350 F until knife inserted in the centre comes out clean. (20 to 30 minutes depending on your oven)
