This recipe came from 2BHOTT, and I altered it just a bit for my family! Very good. Make sure that you grease your pan well. It does stick to pan. PLEASE leave comments as to how long you baked these for. I made them as breasts last night which took about 30 minutes. Ingredients

6 - Boneless Skinless Chicken Breasts (cubed)
1oz Packaged of Ranch dressing mix (low sodium if avail)
3 cups Rice cereal crushed
1/4 cup + 2 Tbsp Grated Parmesan Cheese
2 Egg Whites Beaten
Note: for the calories count I only did 2 cups as you throw a bit away!

Directions
Oven 350 degrees.
Mix the crushed rice cereal, ranch mix and parmesan cheese together in a bowl. Dip the cubed chicken in the egg whites, then into the cereal mixture to coat evenly.
Arrange Chicken bites on well greased baking sheet or baking dish. Bake until golden - check after 10 minutes
