Alaska Omelette

Introduction

A wonderful change from the ordinary omelette A wonderful change from the ordinary omelette
Number of Servings: 1

Ingredients

    1 small can salmon, drained and flaked
    2 lg eggs
    2 tbsp sour cream
    1/2 tsp fresh tarragon, chopped
    2 tbsp butter
    salt and pepper to taste

Directions

*Drain salmon and set a side
*Beat together eggs, sour cream and tarragon
*Season lightly
*Melt butter in a non-stick skillet
*Pour in egg mixture and cook over moderate heat until based is set.
*While base is setting , pre-heat broiler
*Arrange salmon over the soft top of the omelette
*Place pan under broiler until omelette is set
*Loosen the omlette in the pan and carefully fold in half
*Slide omlette on to plate and serve.
