Calico Corn Salsa

Introduction

Number of Servings: 8

Ingredients

    1 1/2 c frozen corn, thawed
    1 c frozen peas, thawed
    1/2 tsp ground cumin
    1/8 tsp dried oregano
    1 Tbsp olive oil
    1 can (15 oz) black beans, rinsed and drained
    1 med tomato, chopped
    1/3 c red onion, chopped
    1/4 c lime juice
    1 Tbsp dijon mustard
    1 garlic clove, minced
    1/2 tsp salt
    2 Tbsp minced fresh cilantro

Directions

In a large bowl, combine the corn and peas. In a nonstick skillet, cook cumin and oregano in oil over medium heat for 2 mins. Pour over corn mixture; stir to coat evenly. Stir in the beans, tomato and onion.
In a small bowl, whisk the lime juice, mustard, garlic and salt. Stir in the cilantro. Pour over corn mixture. Stir to coat. Serve with tortilla chips. Refrigerate leftovers.
Yield 4 cups.
