Chicken Fajitas

Introduction

Mexican favorite revamped to become a much healthier dish! Mexican favorite revamped to become a much healthier dish!
Number of Servings: 4

Ingredients

    1 pound Chicken Breast, boneless & skinless
    1 large onion, sliced thin
    1 large green pepper, sliced thin
    1 cup of fresh mushrooms, sliced
    2 tbs Exta Virgin Olive Oil
    Seasonings to taste (I use about 2 tsp of cumin, 2 tsp garlic powder, and a pinch of red pepper flakes for a little kick)

Directions

Begin by browning chicken in a nonstick skillet sprayed with pam, over medium heat. I also add 1 tsp of seasonings listed above when browing the chicken. Remove chicken and shred, meanwhile add veggies to nonstick skillet (again spraying with Pam), add seasonings and cook until tender. Add shredded chicken back to skillet and combine with cooked veggies, tossing in the Olive Oil at the very end. Add more seasoning if desired.
Makes about 4, 1 cup servings.
Serve with whole wheat tortillas or over brown rice. Very good with some lettuce, tomatoes, lowfat cheese, salsa and fat free sour cream.

  • Unfortunately, I can't rate because there is no recipe showing. I used 1/2 of McCormick's Fajita seasoning mix, 2 chicken breasts, red/yellow/orange peppers & stir-fried. I also used whole wheat tortillas, low fat sour cream & 2% cheddar cheese. All I have to say is, EXCELLENTE (oh, & very easy!) - 2/9/10

    I appologize, I meant to come back and add the directions! Sounds like yours were similar to mine. This is mine and my husband's favorite dish when eating Mexican food and now we can enjoy it guilt free! :)
