Ranch Mustard Bean Burger with Pesto Mayo

Introduction

Trying to use up some extra things at home, came up with this homemade veggie burger. Yum!!! Trying to use up some extra things at home, came up with this homemade veggie burger. Yum!!!
Number of Servings: 4

Ingredients

    15 oz. can white beans, drained and rinsed
    Honey Mustard, 3 tbsp
    Hidden Valley Light Ranch, 1 tbsp
    Celery, raw, .5 cup, finely diced
    3 cloves garlic
    Frozen corn, .5 cup
    Scallions, raw, .5 cup, chopped very fine
    Dried Bread Crumbs, 1 cup
    Flax Seed Meal (ground flax), 2 tbsp
    Pesto Sauce, 0.25 cup
    Kraft Mayo Light Mayonnaise (Mayo), .5 cup

Directions

Saute celery, corn, and garlic five minutes with cooking spray. Set aside. Mash beans with mustard and ranch. Stir in garlic, celery, corn, onions, oats, and flax. Pan fry a couple minutes on each side in nonstick pan or with cooking spray (I do mine in the George Foreman grill) until browned as desired.

Mix pesto with mayo and top burgers. May be eaten with or without bun or sandwich flatbread.
