Rotisserie Chicken breast
1/2 onion (we prefer red, but any will work)
8 oz of fresh mushrooms
3 tbsp Olive Oil
2 tbsp of sliced olives
1 Plum Tomato (any diced tomato will work)
6 oz cooked pasta of your choice (we prefer Farfalle)
Salt and fresh cracked pepper to taste
Saute your onion cut in pieces in the olive oil. When it starts to lilt add diced zucchini and mushroom and shredded rotisserie chicken breast pieces. (Save yourself the headache and pick one up at the grocer on your way home from work!) Once the veggies start to soften top with the diced tomato and olives. Add salt and cracked pepper to taste. Makes 4 servings. Toss with your pasta and serve with a side salad.
