Corn Chowder with Green Chili Peppers (OAMC)

Ingredients

    1 cup green peppers
    1 cup onion, chopped
    1 cup potatoes, cubed
    1/2 cup carrots, thinly sliced
    1/2 cup celery
    2 Tbsp canned diced chili peppers
    1 Tbsp mined garlic
    1 tsp olive oil
    2 Tbsp all-purpose flour
    1/2 tsp cumin
    6 cups frozen defatted Chicken stock
    2 cups frozen whole kernnel corn
    1 cup evaporated skim milk
    3 Tbsp minced fresh parsley
    1/4 tsp ground black pepper

Directions

In a Dutch oven, combine the red or green peppers, onion, potatoes, carots, celery, chili peppers, garlic and oil. Cook stirring, over medium high heat for 5 minutes, or until the onion are soft but not browned. Add the flour and cumin. Cook, stirring for 2 minutes. Add the stock and corn. Bring to a boil.

Reduce the heat to medium. Cover and cook for 10 minutes, or until the potatotes are tender. Check by inserting the tip of a sharp knife into 1 cube. Add the milk parsley and black pepper. Stir to combine. Bring just to a boil.

Freeze: Place into a freezer safe container. Thaw in refridgerator overnight to use. Reheat over medium heat and serve.
