Ingredients

Knox Unflavored Gelatin, 2 envelope, or 14 gram
Water, tap, 1.25 cup ,divided
Great Value Instant Skim Milk Powder, 4 tbsp or 1/4 cup
Crystal Light Lemonade Flavor Soft Drink Mix, 2.5 tsp
Salt, .1/8 tsp
Nordica Fat Free Cottage Cheese, .75 cup
CoolWhip Low Fat - 95% Fat Free, 12 tbsp
Directions
place 1/2 cup water in small saucepan. sprinkle with gelatin. let sit 1 minute then heat water on low until gelatin is dissolved. set aside. In a bowl mix together milk powder, crystal light,salt and a few drops of yellow food coloring if desired. set aside. In a food processor or blender place cottage cheese and remaining water. puree or process until very smooth. Add gelatin and milk mixtures and process until thickened. Place in 6 6oz ramekins and chill 1 hour. Divide cool whip between dishes (app 2 tbsp each) and smooth over.
Could be sprinkled with graham cracker crumbs
