Chicken and Cheese Soft Tacos(OAMC)

Ingredients

    8 oz Chicken, cut up into cubes
    1/2 cup Chicken stock
    1 1/2 cups onion, diced
    1 cup green peppers
    2 garlic, cloves, minced
    1/2 cup medium - hot salsa
    2 tsp ground cumin
    8 tortillas
    1 cup low-fat Monterey Jack Cheese, shredded

Directions

Spray Skillet with cooking spray and cook chicken until cooked. Remove chicken and set aside. Add the stock to skillet. Bring to a boil, scrapping to lossen any browned bits from the bottom. Add the onions, green peppers, and garlic. Cook, stirring frequently, for 5 minutes, or until the onions are golden brown.

Add salsa, cumin, and chicken. Cook, stirring frequently, for 3 minutes or until the liquid is almost evaporated.

Spoon into the tortillas. Divide 1/2 cup of the Monterey Jack among the tortillas. Roll up and arrange, seam side down, in the prepared baking dish. Sprinkle with the remaining 1/2 Monterey Jack. Bake for 10 to 12 minutes, or until the cheese melts.

Freezing instructions: If you want to freeze this meal. My suggestion is to do it by bagging the chicken mixture before adding the cheese and placing in the tortilla. To thaw place in refidgerator overnight and reheat in skillet for 3-4 minutes until hot. Then continue with recipe as above.
