1 1/2 c. Egg substitute (eggbeaters)
6 large eggs
12 Morning Star Farms Sausage Patties
1/2 c. chopped onion
1/2 c. chopped mushrooms
1/2 c. dices peppers, yellow, red, green
1 c. chopped fresh spinach
1 c. shredded Swiss cheese
Mix all ingredients EXCEPT the sausage patties, in a bowl. Spray a 12 cup muffin tin with olive oil. Place 1 sausage patty in each muffin tin and pour the egg mixture over each patty evenly. Bake for 30 mins. Cool and serve.
Makes 12 servings at 171 cals each.
