Breast of Chicken Raspberry

Ingredients

    olive oil
    black raspberry (or raspberry) vinegar
    lemon juice
    honey
    Dijon mustard
    salt
    white pepper
    cayenne pepper
    boneless skinless chicken breasts
    nonstick vegetable oil cooking spray
    fresh parsley

Directions

In a large plastic resealable bag, combine all ingredients except chicken breasts & parsley. Mix well.

Place chicken breasts in plastic bag; refrigerate & marinate for 1 hour. At serving time, preheat broiler. Spray broiler pan & rack with cooking spray (or line with aluminum foil.) Place chicken breasts on rack & broil 6" below heat for 5 to 8 minutes per side, or until the chicken is booked through, basting with marinade after turning. Sprinkle with parsley for garnish.
