Strawberry Jell-O Cheesecake

Introduction

This is a really great light summer pie. It can also be made without the pie crust if you want fewer calories. This is a really great light summer pie. It can also be made without the pie crust if you want fewer calories.
Number of Servings: 12

Ingredients

    1 12-ounce container low-fat (1%) cottage cheese
    3 0.3 ounce boxes sugar-free strawberry jell-o
    2 ready-made low fat graham cracker crusts
    1 pint fresh strawberries, plus extra for garnish
    1 8-ounce frozen lite whipped topping, thawed

Directions

Put cottage cheese in a blender. Make 2 boxes of Jell-o, using 1 cup of hot, and 1 cup of cold water. Before the jell-0 sets, add the cottage cheese. Blend until smooth. Pour into crust and refrigerate until set. Cut up fruit and place on top of pie. Make up remaining package of jell-o per the directions on the box. Pour jell-o on top of fruit and put it in the refrigerator until set. Put whipped topping on top. Garnish with more fruit.
