Easy Orange Roughy

Introduction

Quick, easy, and really flavorful; would probably still be good without the garlic salt and cajun seasoning for those watching their sodium intake. Quick, easy, and really flavorful; would probably still be good without the garlic salt and cajun seasoning for those watching their sodium intake.
Number of Servings: 2

Ingredients

    One large (8oz) or 2-4 oz orange roughy fillets
    1/2 fresh lemon
    2 tablespoons breadcrumbs
    3/4 tsp Parmesan cheese
    1/2 tablespoon butter, melted
    dash Garlic salt
    dash Black pepper
    dash cajun seasoning (optional)

Directions

Place fish in a foil-lined pan. Squeeze juice from 1/2 lemon over fish. In a separate bowl, mix breadcrumbs, parmesan, cajun seasoning, garlic salt, and pepper. Spread evenly over the top of the fish. Drizzle with melted butter. Moisten remaining dry breadcrumbs with more lemon juice. Bake at 400 degrees until fish flakes easily. Broil for approximately 2 minutes to crisp top.

Makes 2 4oz servings.
