Ranch Style Baked Lentils

Introduction

This dish is a great side for barbecues, or even as a main dish. The flavor is very reminiscent of baked beans, in my opinion, and quite tasty! The original recipe called for 1 lb of ground beef, which I changed to 1/2 lb lean ground turkey and 2/3 cup (dry) textured vegetable protein and the nutritionals here are reflecting that. Ingredients

    2 c dry lentils (4 c cooked)
    2 tsp salt
    5 c water, divided
    1/2 lb lean ground turkey
    2/3 c dry textured vegetable protein
    1 envelope dry onion soup mix
    1 c ketchup
    1 tsp prepared mustard
    1 tsp vinegar

Directions

Rehydrate your 2/3 c TVP and set aside.
Rinse the lentils. In a heavy saucepan, bring lentils, salt, and 4 c water to a boil. Cover and simmer 20 mins or until water is absorbed and the lentils are tender. Meanwhile, brown ground turkey in a skillet. Stir in soup mix, ketchup, mustard, vinegar, TVP and remaining water. Gently stir in prepared lentils. Spoon into a 2 qt casserole, and bake covered at 400 degrees for 30-35 minutes. Makes 6 servings.
