Sugarfree Pineapple Pie

Ingredients

    1 graham cracker crust
    1 16 oz carton fat free sour cream
    2 small packages instant sugarfree vanilla pudding mix (use dry mix)
    8 oz can crushed pineapple in it's own juice
    Fat Free cool whip

Directions

Mix sour cream, dry pudding mix, and pineapple (with juice) together in mixing bowl with mixer. Pour into graham cracker crust and top with fat free cool whip. Refrigerate at least 30 minutes to set.

You can change this up as you wish. I have used lemon pudding mix with real lemon juice instead of pineapple or I have used chocolate pudding and a little skim milk for chocolate. Use your imagination. Mmmm Good! and low cal to boot. Great for diabetics too!

    This pie was really great and easy to make. I'm trying to figure out how you came up with your calculations though.

    Mine:
    Fat: 7g
    Carbs: 50g
    Cal: 300
    Prot: 4g
    Sugar: 16g (based only in pineapple and crust)

    Might want to adjust yours because this is not a low-cal dessert. - 12/31/07

    This pie is neither sugar free nor low cal. I have a similar recipe using a low fat premade graham cracker crust and skim or low fat soy milk. 16 slices would be difficult to cut without mushing the pie. 8 servings is realistic. My recipe (based on 8 servings) has about 163 calories per slice. - 3/20/08

    Tasty, used madarin oranges instead of pineapple. But the calorie count is WAY OFF. I come up with something closer to 250 calories per slice. Not the low cal I was looking for. You may want to edit this and re-calculate your calories for more accuracy. This one could blow your daily calorie count. - 10/26/07

    Disappointed in portion until realized at 2 portions it can satisfy and still stay within caloric, carb and fat controls. That and its taste and versitality makes it a
    double welcome to diabetics dessert allowances. It is a KEEPER. - 6/19/07

  • you can make a better crust out of almond meal and butter to shave alot of the sugar and bad fat out or just make it without the crust but id choose another fruit as pineapple is a bad choice for sugarfree...any berry will do - 7/25/07

  • The pudding filling was not tastey at all. It had a very offensive metallic taste. It was just not good at all. I even tried adding more pinapple and juice to it. It did not help. The whip cream was good. - 7/24/07

  • Thanks for the easy recipe. Our guest reallly enjoyed it. The pie is not as sweet as I expected. I did increase the size of the serving and doubled the count. Next time I might elimate the pie shell and just serve it like a pudding dish. - 7/9/07

  • Okay, I shoulda known this was too good to be true. It is tasty. But the naysayers are right; I calculated the calories and it comes out to 253 for one slice if you cut into 8 slices. A long way from 72 calories. If you do cut this into 16 slices, then it comes to 126. Not bad, just misleading info! - 7/5/07

  • This is the pie of the season, i passed it to co-workers everyone is trying to see who can come up with the greatest recipe, i used mandarin oranges and it tastes like a dreamcicle, no one believes me when i tell them how few calories it has. Perfect for Alabama hot summers.

  • I loved this. I used a reduced fat graham cracker crust to shave a few more calories and fat off. I love it this way. I also made it with chocolate and vanilla pudding for a "chocolate cheesecake" also very yummy. I will make this often. - 6/25/07

  • Not sure where you got your nutritional data but with 8 servings this pie packs 252 calories per slice (not 70 as your data indicates). It's tasty but I do not consider that many calories a low-cal dessert... one user's opinion. - 6/17/07
