Introduction

This easy peasy stir fry is low in calories and high in yum. This easy peasy stir fry is low in calories and high in yum.
Number of Servings: 2

Ingredients

    Trader Joe's Island Soyaki Sauce, 4 tbs
    1 tbs olive oil
    2 boneless, skinless chicken breasts
    1/2 C fresh Snow Peas
    1/2 C fresh Broccoli
    1/2 Green Bell Pepper
    3 or four baby bella Mushrooms, fresh


Directions

Cut Pepper into strips, Broccoli into florets and Mushrooms into slices and set aside.

Clean and trim chicken breasts, then cube and set aside.

In a medium skillet, place 1 tbs olive oil and heat until it runs easily to coat the bottom of the pan. Add chicken and saute briefly. Add Soyaki sauce and saute until chicken is no longer pink on any edge.

Add mushrooms and snow peas. Stir fry until snow peas are bright green. Add broccoli and green peppers. Continue cooking until peppers and tender and broccoli is al dente.

Serve over brown rice. Makes two servings.
