Mexican 'Pizza'

Introduction

Ingredients

    1 low fat (96% ff) whole wheat tortilla
    1/2 cup fat free refried beans
    1.5 ounces Cabot 75% Cheddar, finely shredded
    1/2 cup rotel (drained)
    1-2 tbsp chopped onion
    Optional:
    sliced jalepenos
    2 tbsp light sour cream
    2 tbsp salsa

Directions

Preheat oven to 400 degrees. Place tortillas on cookie sheet in oven. 4-5 minutes each side until crisp.

Warm up refried beans in microwave for 1 minute. Optional: Add 1-2 tsp of low sodium taco seasoning before warming up.

Spread beans on tortilla (you may not use all of them), then add the rotel, onions, and cheese on the tortilla and place back in oven until cheese is melted (2-4 minutes and I usually do the last 2 minutes on HI broil).

Cut in 4 pieces with pizza cutter and serve with sour cream and/or salsa.
