Heather's Shrimp Scampi

Ingredients

medium (31-40) count deveined tail off raw shrimp
1 TBS extra virgin olive oil
2 TBS smart balance buttery spread
1/4 tsp or to taste salt
pepper to taste
6 trader joe's frozen garlic cubes
.25 cup white wine (any kind will do)
2 TBS lemon juice (fresh or bottled)
2 TBS. parsely (fresh or dried)
Directions
Toss deveined tail off raw shrimp with olive oil salt and pepper
In a hot skillet cook half of the shrimp turning till just pink on both sides about 2-3 minutes
Add 3 cubes of garlic until shrimp are lightly browned on outside and cooked through 1-2 minutes
Transfer cooked shrimp to a platter and cover to keep hot
Repeat the above actions with the remaining shrimp and add them to the covered platter to keep them hot
Add the wine and the lemon juice to the pan and when liquid is reduced by half - turn the heat to low and add butter and 1 tbsp of parsley
Stirring till you make sure butter is melted.
Spoon the sauce over the shrimp and toss well
Garnish with remaining parsely
Serve over angel hair, capellini, or rice (this recipe uses spaghetti)
makes @ 8 - I cup servings
