Chicken Alfredo

Introduction

What I had for dinner last night. Some things are approximations (you may need more than 2 cups of liquid, if so, add water to thin it out) You can lighten this up by using margarine, lower fat (no fat) milk, and you can use whole grain noodles (I usually do, didn't have them last night) What I had for dinner last night. Number of Servings: 6

Ingredients

    1.5 lbs chicken tenders (raw) or 1.5 lbs bl/sl chicken breast
    4 T butter (you could use margarine or canola oil instead)
    4T Flour
    2 C Milk (plus water to your desired consistancy)
    1 cup parmesan cheese
    1T garlic powder or 3 cloves garlic
    1 tsp salt

    1 1/4 lbs egg noodles (dry) or 6 cups cooked (6 cups used in nutritional info)

Directions

season chicken with garlic powder and salt (if desired salt) and put on george foreman to grill and cook through.

melt butter in sauce pan, add flour and make a roux. Let boil for a min then add garlic and salt. Add milk all at once and whisk until fully incorporated. Let cook on medium until thick and bubbly. Add parmesan cheese and add more water if it is too thick. Add more garlic if desired. :)

Boil egg noodles, drain. cut cooked chicken into bite size pieces. mix noodles, sauce and chicken all into one pan.

At this point you can :
1 Serve
2. put into a casserole, sprinkle more parmesan on top as a garnish and bake for 10 min just because
3. Add cooked broccoli and mix, then bake, or serve immediately.
