Chicken and Cheese Quesadillas


Number of Servings: 16


    Chicken Thigh, 500 grams, cut into cubes(remove)
    Tortillas, medium size, soft flour, President's Choice, 16
    Cilantro, raw, 1/2 cup chopped (remove)
    Ground cumin seed, 2 tbsp (remove)
    Chili powder, 2 tbsp (remove)
    Garlic powder, 1 tbsp (remove)
    Cheddar, old, light, no name (40% less fat), 60 grams, shredded


Heat a bit of oil in a large skillet. Add chicken and cook until well-browned. Add spices and stir until thoroughly coated. Cook, stirring occasionally, until cooked through. Add cilantro. Remove from heat and set aside to cool. Add cheddar and mix well.

To assemble quesadillas: lightly spray both sides of tortilla shells. Heat a skillet and brown each side. Repeat until all are done. Divide chicken/cheese mixture evenly and spread onto one side of tortilla shells, then fold over. Return to skillet and brown each side on medium heat, until the filling is heated through.

Serve with sour cream, guaccamole, diced tomatoes (not included in caloric content),
