Chicken Cacciatore Mix by Tastefully Simple, 6 servings
Chicken Breast, no skin, 16 ounces
*Del Monte Petite Cut Diced Tomatoes, 2 (14.5 oz) cans
Pasta, cooked, 16 oz ? (the pasta was included in the box)
Boil pasta until tender. While the water is getting ready to boil, cut up the 1pound of skinless chicken breast into chunks. Saute in a large skillet until no longer pink. By the time the chicken is cooked, the water should be boiling. Add the pasta to the boiling water. Add the seasoning mix and cans of diced tomatoes to the cooked chicken in the skillet and bring to a boil. After it comes to a boil, turn down the heat and simmer for about 5 minutes. By the time this is done it will be thickened and the pasta should be done.
The box says this makes 6 servings of 270 calories and a serving is 1 cup prepared. But with the cooked pasta and the chicken mixture we got a lot more than 6 cups. We got a total of about 10 cups of cooked ingredients. By my figures it still comes out to about 275 calories for each of the 6 servings, but they would be bigger than 1 cup each.
