IntroductionI like to top with diced tomatoes, and cottage cheese to boost the protein (not included in nutritional values). These may be seasoned to taste. My heartburn just doesn't care for spicy. 1 15 oz can black beans, rinsed and drained
1/2 cup egg substitute (or 2 eggs)
1/2 cup bread crumbs
2 tbsp olive oil, plus 1 tbsp for frying
1 medium onion, diced finely (about 1/2 cup)
1 celery rib, diced finely (about 1/2 cup)
1/4 tsp garlic powder
salt & pepper to taste
Process the beans with the eggs until smooth. Add to this mixture the bread crumbs and 2 tbsp oil, combine. Heat the 1 tbsp oil in a medium skillet over medium heat, saute the onion and celery until tender. Sprinkle on the garlic. Add the vegetables to the bean mixture and add the salt and pepper. Stir to mix well. Using a 1/3 cup measure, scoop up 6 portions of the bean mixture, shape, and place in hot pan. Fry about 5 mins. over medium heat, flip and fry about 5 more mins. until browned on both sides. (Save a few bread crumbs to coat burgers before frying.)
