Pampered Chef Seafood Chowder

Introduction

Number of Servings: 12

Ingredients

    1 lb potatoes, diced in 1 inch cubes
    1 cup chopped onion
    1 cup sliced carrots
    1 cup sliced celery
    2 cans minced clams, reserving juice (1 cup)
    1 tbsp butter
    2 14.5 cans chicken broth
    salt
    pepper
    3/4 c flour
    2 cups half and half
    1 lb cooked shrimp.

Directions

Saute onion in butter 3 min. Add diced potato, carrots, celery, clam juice, chicken broth, salt, and pepper. Bring to boil, cover, reduce heat and simmer 3 min until potatoes are tender. Gradually wisk half and half into flour until smooth. Add clams, shrimp to chowder. gradually wisk in flour mixture. Return to a boil and cook 2 minutes until thickened, stirring constantly.
