Chicken Soup with Leeks, Zucchini and Spinach

Introduction

A quick soup for a light meal . I made this with beef broth for more flavor. A quick soup for a light meal . I made this with beef broth for more flavor.
Number of Servings: 4

Ingredients

    2 tbsp olive oil
    350 grams leeks, sliced and rinsed thoroughly
    4 cloves garlic minced
    300 grams cubed zucchini
    1 lb chicken tenderloin, cubed
    4 cups beef broth
    100 grams baby spinach, coarsely chopped
    1 tsp dried thyme
    Red pepper flakes to taste
    salt and pepper to taste


Directions

Heat olive oil in a pot and add the leeks. Sautee for 5 minutes. Add garlic and cook 3 more minutes.Add zucchini, chicken, broth and Madeira as well as the seasoning. Bring to a boil, reduce heat and simmer for 15 minutes. Add water if needed. Add spinach, cook a couple of minutes and serve.
Makes 4 servings
