Chicken Tamale Pie

Introduction

Nice dish when you have a bit of time to prep. Can be made with canned beans in place of the refried beans and ground beef or meat substitute in place of chicken.

Serve with lettuce and cilantro to dress it up. Top with sour cream in desired.

Ingredients

    1/2 Chicken Breast cubed
    3/4 cup Onions, chopped
    Garlic, 1 clove
    2 Canned Chipotle Chilis in Adobo Sauce (save rest of can for other uses)
    1 can Rosarita Black Bean Refried Beans
    8oz Tomato Sauce
    1/2 cup sliced Black Olives
    1 cup Yellow Sweet Corn
    1 cup Yellow Cornmeal
    2 1/2 cups Water
    1/4 cup Cheddar Cheese grated


Directions

Preheat oven to 375*.

Brown chicken in non stick skillet. Add onion through corn in skillet and simmer for 15 minutes.

Pour chicken mixture into 9x13 pan. Sprinkle cornmeal across top of mixture. Pour water over top of cornmeal and put in oven. Bake for 45 minutes. Top with cheese and heat unitl melted, approximately 15 minutes.

Serve with shreaded lettuce or sour cream (not included in nutritional information)
