John's Stir Fried Veggies

Introduction

A great simple stir fry my husband makes. It can also be served raw if the carrots and broccoli are omitted and veggies are sliced thinner. A great simple stir fry my husband makes. It can also be served raw if the carrots and broccoli are omitted and veggies are sliced thinner.
Number of Servings: 4

Ingredients

    - 1/4 each red, yellow, green and orange bell peppers, cut into strips
    - 1/2 a medium white onion, cut into strips
    - 2 portabella mushrooms, chopped
    - 1 bunch broccoli, chopped
    - 3 tbsp rice vinegar
    - 3 tbsp extra virgin olive oil
    - 1 med zucchini, sliced
    - 7 baby carrots, sliced
    - 1 tbsp seasoning salt

Directions

1) Add 1 tbsp oil to the pan first and heat (medium).
2) Meanwhile put veggies in large bowl and hand toss with 2 tbsp oil and rice vinegar.
3) Add veggies to pan and add seasoning salt.
4) Cook until veggies are just hot but still crisp
Serves 4 side dish portions.
Add meat to make it a meal.
