Ingredients

3/4 cup uncooked brown rice
1 can white beans, drained but not rinsed
1/2 cup diced lean ham
1/2 cup diced red or green peppers
1/2 cup chopped onion
1/2 tsp minced garlic
1 tsp canola oil
1/2 cup chicken broth
Dash of lime juice
salt, pepper, hot sauce, and cilantro to taste
Directions
Begin cooking rice according to your own cooking method. I boil mine on the stove top. While rice is cooking, heat oil in a large pan and sautee onions and peppers till transparent. Add ham and garlic, browning just until the house smells like bacon :) Add beans, broth, a dash of salt and pepper, and some cilantro. When rice is nearly cooked, add rice and remaining cooking water to the bean mixture. Simmer until rice is finished cooking, adding more water or broth if necessary. Add lime juice and hot sauce to taste at the end. 3 servings: Serves two main dish portions with one left over for lunch at work later in the week!
