Broccoli Cheese and Veggie Soup or sauce

Introduction

Ingredients

    1 med onion, chopped
    2 med carrots, chopped
    1 clove garlic, chopped
    2 tsp olive oil
    3 cups broccoli florets
    3 cups skim milk
    4 oz cheddar cheese shredded
    1 tsp salt
    1/2 tsp ground thyme
    1/8 tsp pepper
    Mrs. Dash, any kind to taste

Directions

In a large saucepan, sauce onions, carrots and garlic in 2 tsp olive oil until soft. Add broccoli and milk, heat to boiling and then simmer 5 min. Add shredded cheese to melt. Don't boil or cheese will curdle. Or you can place 1 oz of cheese in bowl and spoon 1/4th of soup on top for 4 servings.
For leftovers, an alternative way to serve is to puree the mixture in a blender and then serve one cup over a baked potato or more broccoli. Get lots of veggies that way. You can also freeze portions.
