Cheesy Ham & Potato Soup

Introduction

Number of Servings: 32

Ingredients

    1-1/2 cups finely chopped onions
    1-1/2 cups finely chopped celery
    6 finely chopped cloves of fresh garlic
    1-1/2 cups butter (3 sticks)
    1-1/2 cups flour
    1-1/2 tsp. salt
    3/4 tsp. pepper
    6-9 cups of chicken broth (stock)
    6-9 cups of milk
    6-10 small to medium potatoes
    1 lb. of finely chopped ham
    2 lbs. Velveeta

Directions

1. Cut potatoes into bite size cubes, leave skins on potatoes. Boil for approx. 30-35 mins., until tender.
2. Melt butter in 8 quart stock pot.
3. Sautee garlic, onions, & celery until tender.
4. Mix flour, salt & pepper, then slowly add to butter mixture, over low heat. Stir constantly for 1 min. after adding last of flour mixture.
5. Very slowly add 1 cup of broth, at a time, completely mixing it in before adding the next cup. This will help preserve the thickness of the soup.
6. Slowly add the milk until you have it the consistency that you prefer, just do not let it boil.
7. Add potatoes, ham & cheese, which you have cut to make it easier to melt.
8. Simmer & stir until all of the cheese is melted.

Makes approx. 8 quarts of soup - 32 one cup servings.
