First Place Parmesan Chicken

Ingredients

    8 tablespoons low-fat buttermilk
    8 tablespoons Parmesan cheese
    16 ounces boneless chicken breast, pounded to 1/4 inch thick
    1 tablespoon all purpose flour
    dash of garlic powder, onion powder and black pepper
    3/4 cup plain or Italian bread crumbs

Directions

Heat oven to 375 degrees. Combine buttermilk and cheese. Sprinkle chicken with flour and seasonings, dip into buttermilk mixture coating both sides. Dip chicken into crumbs and coat both sides. Place in sprayed 13x9 pan, bake for about 45 minutes. Serves 4.
