Aduki Bean Tabouli

Introduction

This is a twist on classic tabouli. This is a twist on classic tabouli.
Number of Servings: 11

Ingredients

    1 cuo of fresh cilantro (you can substitute parsley or watercress for variety)
    1 15oz can of Eden organic Aduki beans
    1 cup raw brown Basmati rice
    1 fresh lemon
    4 scallion stalks
    12 Kalamata olives
    2 tbs extra virgin olive oil
    garlic powder to taste

Directions

Cook the basmati rice as per package directions. Meanwhile chop cilantro, kalamata olives and scallions. Add these to the cooked rice. Add rinsed Aduki beans, olive oil, lemon juice and garlic powder. Mix well and chill. Makes 11 half cup servings. Enjoy!
