"Greek" Chicken and Veggies

Introduction

Number of Servings: 4

Ingredients

    4 boneless skinless chicken breast halves (approx 1 lb)
    2 cups cut green beans, fresh
    1 can diced tomatoes with basil, garlic and oregano
    1 tsp oregano
    1 tsp onion powder
    4 oz feta cheese, crumbled
    salt and pepper to taste

Directions

Preheat grill to medium high or oven to 450 degrees

prepare 4 sheets (12"x18") aluminum foil

Cut chicken into strips. Combine chicken, beans, tomatoes, oregano, and onion powder.

Center 1/4 of the mixture on each sheet of aluminum foil. Fold the ends of the foil to form a tent-top packet (i find it easiest to crimp and roll, but you can fold neatly too).

Grill for 10-14 minutes in a covered grill, or bake 20-24 minutes on a cookie sheet in the oven.

Salt and pepper to taste. Sprinkle with cheese before serving. Each packet is one serving.
