Lord of the Onion Rings

Introduction

Hungry Girl's low-fat, low-cal, unfried, crispy delicious onion rings! Hungry Girl's low-fat, low-cal, unfried, crispy delicious onion rings!
Number of Servings: 2

Ingredients

    1 large onion
    2 egg whites or 1/4 cup egg beaters
    1/2 cup Fiber One or Grape Nuts cereal, pulverized into crumbs (just whirl the cereal around in your food processor)

Directions

Preheat the oven to 375* F, and spray a baking pan with a little bit of cooking spray

Whisk the egg whites together in a small bowl. Set that next to a pie pan or other shallow dish filled with the cereal crumbs.

Slice the ends off of the onion and peel off the outer layer of skin. Cut the onion into 1/2 inch thick slices and separate the slices into rings.

Dip each ring into the egg, coat, and then (after shaking off the excess) dip into the cereal crumbs. Using a spoon or your fingers, fully cover the rings with crumbs.

Spread the rings into a single layer on the baking sheet, and bake 20-25 minutes.

~HG says it serves one, but I can't imagine eating 15-20 onion rings as a side dish. I say this makes 2, 7-10 ring servings.~
