Mediterranean Roasted Cauliflower

Introduction

Delicious Mediterranean style cauliflower!! Delicious Mediterranean style cauliflower!!
Number of Servings: 5

Ingredients

    1 head of cauliflower (medium), broken into medium pieces
    5 Cloves of garlic - fresh, peeled, sliced thick
    1/4 cup olive oil (program wouldn't let me put cup in)
    1 tsp cumin
    1 tsp coriander
    1 tbsp salt (I prefer sea salt)
    1 tsp black pepper

Directions

Pre-heat overn to 500 degrees.
Break up the cauliflower head into smaller size florets.
Peel and cut garlic cloves (I cut them in thirds).
I prefer a food storage bag or plastic bag and put cauliflower and garlic in.
Add cumin, coriander, salt, pepper and olive oil.
Shake/mix it well so spices will be evenly distributed.
Put ingredients in baking pan spread out - be sure there is room, if too closely packed, it will steam and not roast.
Cook for approximately 15 minutes - until slightly browned and semi-soft to the fork. (In other words, cook it how you like it!)

  • Waaaay too much salt!! I would just not add any when mixing all ingredients and salt it when on the baking sheet/pan. - 9/24/11
