Introduction

We make a batch of these each month, wrap them in aluminum foil, and freeze them individually. During the month, you can reheat them straight from the freezer, wrapped in a paper towel, in about 1minute. Ingredients

    1 dozen eggs
    3 tbsp Canola Oil
    9 oz ham, chopped
    2 cups shreddad cheddar
    16 10" Tortillas

Directions

1. Scramble the eggs in 2 tbsp of canola oil.

2. Fry the chopped ham in 1 tbsp of canola oil.

3. Mix the eggs, ham, & cheese together in a big bowl.

4. Distribute mixture evenly among 16 flour tortillas, fold and either serve or freeze.
