Ingredients

    1/2 cup smart balance
    1/2 cup great white northern beans, pureed
    1 cup splenda
    1 cup splenda brown sugar
    1 large egg
    1 large egg white
    1 tsp vanilla extract
    2 cups white wheat flour
    1 tsp baking soda
    1 cup chocolate or sugar free chocolate chips

Tips

If you are not diabetic, you may use regular brown sugar and white sugar. This recipe was for my dad who was a diabetic.


Directions

Puree' beans in a blender until smooth. Place into large mixing bowl and add smart balance. Blend until smooth and add splenda brown sugar and splenda white sugar. Blend until mixed. Add egg and egg white. Blend until creamy. Add vanilla. Add flour and baking soda until thickened. Add chocolate chips (may substitute sugar free chocolate). Bake at 350 for 8-12 minutes. Cookies will have more of a "cake-like" consistency.
