Potato Salad (Homemade)

Introduction

A lower calorie and much tastier version of potato salad. A lower calorie and much tastier version of potato salad.
Number of Servings: 12

Ingredients

    6 medium russet potatoes, skinned, chopped and boiled
    6 large eggs, hard boiled, chopped
    1 can black olives, chopped
    1/2 cup green olives, chopped
    1 cup pickles, chopped
    1 cup onion, chopped
    1 cup bell pepper, chopped
    1 cup mustard
    4 Tbsp. light miracle whip
    4 tsp garlic salt (to taste)
    1/2 Tbsp. black pepper (to taste)

Directions

Boil potatoes until slightly soft. (About 15 minutes.) Hard boil eggs. In a large mixing bowl, combine olives (both kinds), onions, bell pepper and pickles. Mix well. Add potatoes and eggs. Mix well. Add mustard, miracle whip, salt and pepper. Stir until all ingredients are well-combined.

Makes 12 1-cup servings.
